I don't just love cabbage. I love (ok, not quite but still???) pie. So, the idea of cabbage and onion pie was amazing. What nearly stopped me was fear of pie crust creation - a fear that is real for me.
But: I was victorious in making both the crust and the pie. Want to know more? Keep reading.
Let's start with the reality that I came across a recipe - with no intentionality in looking for it - for cabbage and onion pie. I was intrigued. It was a kind of Russian pie - and - have I said, I was intrigued. I admit I cannot find the one I made at this point - either on line or the actual magazine. It was a russian side discussion in a magazine - and an amazingly easy pie to make.
From memory, a few items:
- The pie crust went very well. Because of the recipe, I used Crisco (aka vegetable shortening) to make the pie crust - and it was both tasty and relatively easy. The crust was - actually - good. If I do say so myself.
- The filling was a mix of (a) green cabbage ( a whole one, cut into squares, and sautéed. I have no memory of whether the cabbage was blanched. See, I need to find - or you need to find - the recipe!) and (b) onion (I think chopped and sautéed ahead then sautéed with the cabbage) and (c) hard boiled eggs (I think 2, chopped and mixed into the cabbage/onion mixture) and (d) maybe something else like mayonnaise? NO memory.
- I made it in a square pan, with the crust all around - including the top which of course requires a few slits for steam release. I baked it - for some unknown time at some unknown temperature.
- And, it was truly amazing. I loved it - both the smell while cooking it and the taste while devouring it. I may have even made it twice which makes the reality that I cannot find the recipe nor can I remember some things a bit (a tiny bit) troubling.
I have, of course, googled. And I have found similar though definitely not identical recipes. They can be made with or without potatoes, with or without meat, and in many ways. I will keep looking - and maybe you can find the one I mean and add it to the comments?
